How to Prepare

Brush the shell clean, then steam, braise or sear briefly over high heat. Keep cooking times short and gentle, as the meat turns firm and rubbery when overcooked. A splash of soy, garlic and spring onion is all it needs.

Storage

Keep refrigerated between 0 and 4 C and use within two days, or freeze on the day of delivery for up to three months.
